Oinovation Wines IKE – Chimera Still NV

The variety Savatiano and the production method Retsina are almost synonymous, but you can also put other things into Savatiano besides resin. Oinovation Wines, the producer behind the Chimera label, adds saffron – specifically Krokos Kozanis – to their Chimera Still, a 100% Savatiano from Attika. As an aromatized wine, it falls outside the usual PGI/PDO classifications. I am not convinced by their sparkling wine, but I couldn't believe how well the saffron spice goes with Savatiano. The pairing works remarkably well, producing something genuinely interesting and distinctive. A very good wine that earns 88 points.
